Arithmetic works with numbers you already know. Algebra goes one step further: it lets you work with a quantity before you know its value. That single idea — giving an unknown a name and calculating with it — is what makes algebra so useful.
Algebra is the branch of mathematics that solves problems containing unknown values.
Instead of stopping when a number is missing, you give that missing number a letter, write down what you do know as an equation, and then work out what the letter must be.

are the usual choices, but the letter itself carries no meaning. What matters is what you declare it to stand for: the number of students, an unknown price, the length of a side, the time required.
A variable lets one statement describe every case at once. These formulas are true for all values, not just for one particular set of numbers:

Once a variable's value is known, substitute it — replace the letter with the number and finish the arithmetic.
The formula is written once; substitution adapts it to any situation you meet.
